Weekend Wrap-up #3

I feel much better about my food choices this week. They weren’t the most creative, but they were real foods.

I ate at least 3-4 clementines each day.

I had some pomegranates, which are delicious but messy.

A couple lemons. Yum!

Last night I finally made the risotto-stuffed tomatoes. The previous times I’ve made them, I used sweet potatoes but this time I used Yukon Golds, as suggested in the recipe…. use sweet potatoes. Seriously.

I also finished up the last of my batch of Cypriot chickpea stew (definitely making that again, too, but with lots more red pepper).

Let’s hope I can keep my focus on eating lots of fruits and veggies. I hope this post will help me remind myself how much better I feel when I eat enough of them, so I can stay on track with it even though it’s not my weekly challenge.
